Lovely Japanese sweets Dorayaki - Pancake sandwich (Gluten-free sweets)

It is lovely sweets of Japanese, Dorayaki is yummy with sweet of anko and fluffy pancake! If you eat it once, you can't stop eat it.  


What is dorayaki?
Dorayaki is one of the old Japanese confection. Azuki bean jam in between two small castella. Castella is Japanese sponge cake. Ingredient are egg, sugar, syrup and add wheat flour. Taste is sweetness of sugar and fluffy, that is feature of castella. This dorayaki is gluten-free because use pancake instead of castella made from sweet rice flour. Additionally each ingredients have rich nutrition matcha, almond powder, anko, butter, kuromitsu, honey...

You can change ingredients of toppings as you like. Butter and sweet boiled chestnut, peanuts butter, ice cream etc...This time, I choosen anko and salt butter. This is very good combination!! You will be crazy on the taste. Small talk here.. "DORAEMON" which very famous character of Japanese cartoon loves dorayaki!!

How to Cook
Step 1 Make mixture
Put egg, honey, black honey, brown sugar into bowl. Stir it with whisk until the sugar has dissolved. Add milk and stir with whisk. And add sweet rice flour and baking powder into bowl, stir very well. Then separate it, and make white mixture and matcha mixture.
-Make white mixture
Put almond powder into half of mixture, Add olive oil and stir it until familiar in mixture.
-Make matcha mixture
Put matcha powder and sweet rice flour into half of mixture, Add olive oil and stir it until familiar in mixture.
Step 2 Cook mixture
Cook mixture with nonstick frying pan over low heat. When it got bubble, turn it with spatula and cook brown the other side.
Dish up
Put azuki bean jum and salt butter in between pancakes, and cut it. put on the plate as you like.

100g----sweet rice flour(Mochiko)
1 tsp----baking powder
1---------egg
1 tbsp--honey
1 tbsp--black honey
20g------brown sugar
100ml--Milk
(White)
15g-----almond powder
1/2 tbsp---olive oil
(Matcha)
1 tbsp-matcha powder
10g-----sweet rice flour
1/2 tbsp---olive oil
Toppings
Azuki bean jam(Ogura an) 
Salt butter
