Banana Pound Cake with Nuts and Chocolate Toppings

You can enjoy rich banana flavor and taste with fluffy banana cake. This cake combined the puree that cooked ripened banana and baked.
It is already cooked, so no worry to half baked of cake. And it can bake cake fluffy more than using raw banana. Besides, it has condensed banana taste and rich flavor.

Ingredients ( 8 inch×4 inch loaf pan or 20 for bite-size cup cakes )
125g--butter (4.40925 oz/0.2755775 lb)
110g--brown sugar (3.88014 oz/0.2425082 lb)
75g---almond powder (2.64555 oz/0.1653465 lb)
2 or 3 puree of bananas (Recipe at bottom)
50g--chocolate (1.7637 oz/0.110231 lb)

50~60g nuts (cashew nuts, almonds, walnuts, hazelnuts, cacao nibs)

How to cook 
Cook banana puree and cool to room temperature. 
Bring back to room temperature all ingredients.
Lined with oven paper on the loaf pan
Step 1 To make batter
Put butter and brown sugar into bowl, and whisk it until become white. Add eggs for three times into the bolw and whisk it very well. When it becaome creamy, add banana puree and mix batter with using rubber spatula. And add almond powder and mix well. The last add flour and mix taking care not ot make sticky. 
Step 2 To bake 
Put the batter into the loaf pan and put toppings on top of the batter.
Bake it in an oven 340℉ during 50 to 60 minutes. Cool it to room temperature while put in the loaf pan.  
!!! Bite-sized cupcakes ( 40g to 50g per one ) : 340℉, 20 to 30 minutes

How to cook
Slice bananas to 0.5 inch width. Put butter into fry pan and put on medium heat. Put sliced bananas into the fry pan when butter melted, and cook until get brown both sides. Sprinkle brown sugar on the banana and mix until sugar melt completely. Put brandy into it and burn off alcohol (Flambe). 

Two or three bananas
30g     butter (1.05822 oz /0.0661386 lb)
30g     brown sugar
30cc   brandy

This banana puree is very convenient for baked cake. Because it is already cooked, so no worry to half baked. Furthermore cooked banana become condensation of flavor and mild taste.
