Cold Japanese noodle with chicken (Buckwheat noodle | SOBA | 蕎麦)

What is SOBA?
Soba made from buckwheat. Soba have some kind of name for depend on rate of buckwheat and wheat. It called "juwari soba" if it made from 100% buckwheat. "nihachi soba" made from 80% of buckwheat and 20% of wheat. Soba is one of the represent of Japanese food and mostly famous in "zaru soba". it is cold soba served with mentsuyu and can enjoy buckwheat taste and flavor.It have eat during hot season mostly.Soba have rich nutrition of Vitamin B1, B2 and high-protein. It is good for recover the body condition. Old Japanese people had know what it is good meal for the hot summer in Japan!!

Directions
Step1 Prepare noodle 
Boil soba with boiling water for few min. ( Check the package of soba you bought )   And cool soba with ice water. 
Dish up 
Put ice, soba and toppings into a cup. And pour Japanese noodle soup into the cup. 
Put seaweed and wasabi on top of soba when you eat.

Preparing Cooking Utensil
Bowl, Pot, Knife, Cutting board, mixer/blender or white radish grater, Chopsticks
Cooking ingredients (Serves 1 person, 10 min) 
SOBA
100g----dried 100 percent buckwheat noodle* (3.5274 oz / 0.220462 lb)
200ml---Japanese Noodle Soup 
Toppings (as much as you wants)
100g----steamed chicken
Grated white radish
Japanese Roasted Shredded Seaweed
Wasabi paste**
Ice

Japanese Noodle Soup "Mentsuyu"

Ingredients (serves 2 , 5min )
150ml-----water  
1 tsp-------hondashi  
1 tsp-------kombu dashi powder  
3 tbsp-----mirin  
2 tbs-------usukuchi soy sauce  
1 tbs-------koikuchi soy sauce  
How to : Put all ingredients into pot and boil just once. 

Steamed chicken

Ingredients (serves 2 , 30 min )
250g ----chicken (8.8185 oz/0.551155 lb)  
75ml----rice wine  
1/4 tbsp----salt  
10g -----ginger  
How to : Marinating chicken with rice wine, salt and ginger. put chicken into pan-fly and brown both side, add marinating liquid into the pan. Then steam chicken. 

Additional Information
Dried buckwheat noodle* is called "Soba" in Japanese.  It have some kind of soba.  "Juwari soba" made from 100 percent buckwheat flour. "Nihachi soba" made from 80 percent buckwheat flour and 20 percent wheat flour. 
Wasabi paste** : Try to very little first, if you have never ate it. Because it is very spicy!!  
This is a plant of the Brassicaceae family, which includes cabbages, horseradish, and mustard.
