What is Japanese cold vermicelli noodle (Somen | そうめん)?
Some (そうめん|素麺)is very thin Japanese noodle made from wheat flour. It served as cold dish during summer usually, and eat with some toppings. Japanese people enjoy both of taste and visual of cold. Because Japanese summer is very hot and want to feel cool sensation. Somen have color variety, pink colored by plum, green colored by matcha, also yellow colored by yuzu...etc. During winter season, it served hot and change name "Nimen |煮麺". It is soup with somen noodles and various ingredients in a soy sauce broth.

How to Cook
1 step : Boil and cool noodle
Boil noodle with boiled water and cool noodle with ice water. It is very short time, because somen is very thin.
Dish up 
Put ice into the plate. Next, put somen into the plate. Then put toppings and ice on top. 
Pour mentsuyu into the plate when you eat.

200ml---Japanese noodle soup (Mentsuyu)

Toppings ( All of as you like) 
10g----sweet simmered dried mushrooms shiitake (0.35274 oz / 0.0220462 lb)
25g----thin omelette (0.88185 oz / 0.0551155 lb)
30g----steamed chicken (1.05822 oz / 0.0661386 lb)
30g----julienne strips cucumber
3 leaves-----julienne strips green perilla

Japanese noodle soup : Mentsuyu
Ingredients (serves 2 , 5min )
150ml-----water
1 tsp-------hondashi
1 tsp-------kombu dashi powder
3 tbsp-----mirin
2 tbs-------usukuchi soy sauce
1 tbs-------koikuchi soy sauce  
How to cook : Put all ingredients into pot and boil just once. 

Sweet simmered dried mushrooms shiitake
Ingredients (serves 2 , 5min )
10g----dried mushrooms shiitake (0.35274 oz / 0.0220462 lb)
200ml----water
1 tbsp----sugar
1/2 tbsp-koikuchi soy sauce
How to cook : Saok shiitake with water, boil shiitake, water and sugar. put soy sauce when it got stickily. 

Steamed chicken
Ingredients (serves 2 , 30 min )
250g ----chicken (8.8185 oz/0.551155 lb)
75ml----rice wine
1/4 tbsp----salt
10g -----ginger  
How to cook: Marinating chicken with rice wine, salt and ginger. put chicken into pan-fly and brown both side, add marinating liquid into the pan. Then steam chicken. 

Thin omelette
Ingredients (serves 2 , 5min )
1----egg
1/4 tsp----salt
How to cook : Mixing egg and salt, then fried it in the pan-fry. Slice it.
